Ingredients

  • 1 cup Minute®Multi-Grain Medley Cups
  • 1/2 cup chopped, cooked chicken
  • 1/2 cup chicken broth
  • 1/3 cup julienned carrot
  • 1/3 cup sliced snow pea pods
  • 1/4 cup coconut milk
  • 1/4 tsp fish sauce
  • 1 tbsp lime juice
  • 1/2 tsp Sriracha sauce (optional)

Instructions

  • Our version of Tom Kha Gai Soup, a traditional Thai hot and sour soup with coconut milk, is ready in just 5 minutes! Make your own takeout dish at home when you’re craving a light and easy-to-cook dinner after a busy day.

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Combine chicken, broth, carrot, snow pea pods, coconut milk and fish sauce in a medium, microwave-safe bowl.

    Step 3

  • Microwave on HIGH for 1-2 minutes.

    Step 4

  • Add in rice, lime juice and Sriracha sauce, if using.

Tom Kha Gai Soup

This Thai hot and sour chicken soup is made with traditional Thai ingredients like coconut milk, fish sauce, lime juice and pea pods. This version swaps out rice noodles for Minute® Multi-Grain Medley Cups, giving your dish whole grains, healthy flax seeds as well as an extra hit of protein. The heat in this dish comes from the Sriracha sauce drizzled over the top. Feel free to omit the sauce to tone down the spice.
