  • 1 tbsp canola oil
  • 4 boneless, skinless chicken breasts
  • 1 1/2 cups water
  • 1 can (10.75 oz) condensed cream of chicken soup
  • 1/2 tsp paprika, divided
  • 1/2 tsp black pepper, divided
  • 2 cups broccoli florets
  • 2 cups Minute® White Rice

Instructions

  • Step 1: Prep the Chicken

    • If using boneless skinless chicken breasts, heat olive oil in a large skillet over medium-high heat.
    • Season the chicken with salt and pepper.
    • Cook for about 4 minutes per side until golden brown and fully cooked (165°F internal temp).
    • Remove from the pan and set aside.

Step 2: Cook the Rice & Broccoli

    • In the same skillet, add water, cream of chicken soup and Minute® Instant White Rice. Stir well to combine.
    • Bring to a boil, then reduce to a simmer and cover. Cook for 15 minutes or until the rice is tender.

    Step 3: Assemble the Casserole

    • Once the rice is cooked, mix in the cooked chicken and broccoli.

    Step 4: Bake Until Golden

    • Preheat oven to 375°F.

Serving Suggestion: Garnish with fresh parsley or a sprinkle of parmesan for extra flavor!

Time Saving Tips: If using frozen broccoli florets, add them to the pot 5 minutes before the rice is done to soften.

Use rotisserie chicken instead of fresh baked chicken to cut down on cooking time.
