Heat rice according to package directions. Toss warm rice with spinach in a small bowl until spinach is lightly wilted.
Toss together chicken, dip, and 2 tablespoons of water in a microwave-safe bowl. Microwave on HIGH for 1-2 minutes, or until chicken is heated through and sauce is bubbling.
Serve chicken mixture over spinach and rice. Garnish with chives.
