Ingredients

  • 2 cups Minute® White Rice Cups
  • 1/2 cup cooked black beans
  • 1/2 cup chopped, cooked chicken
  • 1/2 cup whole kernel corn
  • 1/2 avocado, diced
  • 1/4 cup shredded Cheddar cheese
  • 2 tbsp thinly sliced green onion
  • 1/4 cup salsa (optional)
  • 2 tbsp sour cream (optional)

Instructions

  • This Southwest Style Chicken Bowl is a quick, delicious meal, perfect for a busy weeknight. Made with our Minute® Ready to Serve White Rice and a handful of tasty toppings, this delicious dinner is ready in just 5 minutes!

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Transfer rice to two serving bowls.

    Step 3

  • Arrange beans, chicken, corn and avocado on top of rice. Garnish with cheese and green onions. Serve with salsa and sour cream, if using.

    Recipe Tip

    If you don’t have any ripe avocados on hand, simply garnish this dish with your favorite store-bought fresh or frozen guacamole.
