Chicken and Mushroom Quesadilla

Ingredients

  • 1 cup Butter & Sea Salt Jasmine Rice Cups
  • 4 large tortillas
  • 2 tbsp butter
  • 1 cup shredded chicken
  • 1/4 cup mushrooms
  • 1 cup Mexican cheese, shredded
  • 1 tbsp cilantro, chopped (optional garnish)

Ingredients

  • 1 cup Butter & Sea Salt Jasmine Rice Cups
  • 4 large tortillas
  • 2 tbsp butter
  • 1 cup shredded chicken
  • 1/4 cup mushrooms
  • 1 cup Mexican cheese, shredded
  • 1 tbsp cilantro, chopped (optional garnish)

Instructions

  • Enjoy a cheesy quesadilla in less than 10 minutes.

    Step 1

  • Heat rice according to package directions. 

    Step 2

  • Heat a small pan on medium high heat and add butter. Sauté chicken and mushrooms for about 2 minutes. Combine chicken and mushrooms with the rice, then set aside. 

    Step 3

  • Heat a large skillet on medium high heat and add one tortilla. Flipping the tortilla over a few times until lightly browned, about 1 minute. Remove and repeat with other tortilla. 

    Step 4

  • Lower the heat to medium low. Add back one tortilla and add a quarter of the cheese on to the tortilla. Cover with lid and allow to melt for 1 minute. 

    Step 5

  • Add half of the chicken, mushroom and rice mixture. Place 1/4 more of the cheese on top followed by the other tortilla. Cover with lid for another minute to allow cheese to melt. Remove from heat.  

    Step 6

  • Repeat with the remaining ingredients. Cut both into wedges & serve. 

    Recipe Tip

    Can be served with sour cream, guacamole, and/or salsa for dipping.
