Ingredients

  • 1 cup Minute® Ready to Serve Jalapeño Rice
  • ½ cup frozen fajita style vegetables (bell pepper and onions)
  • ½ cup cooked shredded chicken
  • ¾ cup chicken broth
  • ¼ cup tortilla, crushed

Instructions

  • In just 5 minutes you can make this delicious, Mexican-style Chicken Tortilla Soup with Minute® Jalapeno Rice.

    Step 1

  • Heat rice according to package directions.

    Step 2

  • In a small microwave safe bowl, heat vegetables for 1 minute.

    Step 3

  • Add chicken, broth and rice.  Microwave 1 minute.

    Step 4

  • Top with tortilla chips.
