  • 1 cup vegetable broth
  • 1 cup frozen fajita-style vegetables
  • 1/2 tsp garlic powder
  • 1/4 ground cumin (optional)
  • 2 tsp lime juice
  • Mexican blend cheese, shredded
  • tortilla chips, crushed
  • fresh cilantro, chopped

    Step 1

  • Heat rice and beans according to package directions.

    Step 2

  • In a medium, microwave-safe bowl combine rice and beans, broth, vegetables, garlic powder and cumin, if using.
