Ingredients

  • 1 cup Minute® Ready to Serve Yellow Rice
  • 1/2 cup shredded cooked chicken
  • 1/3 cup frozen peas
  • 1/3 cup halved cherry tomatoes
  • 1/3 cup sliced jarred roasted red peppers
  • 1/4 cup shredded Manchego cheese, divided

Instructions

  • Step 1

  • Prepare yellow rice as per package directions.

    Step 2

  • Meanwhile, toss together chicken, peas, cherry tomatoes and red peppers in a microwave-safe bowl; microwave on HIGH heat for 60 to 90 seconds or until heated through.

    Step 3

  • Combine rice, chicken mixture and 2 tbsp of the Manchego cheese in a bowl.

    Step 4

  • Sprinkle with remaining Manchego cheese before serving.

    Recipe Variations

    Add pimiento-stuffed green olives, a drizzle of olive oil and a sprinkle of almonds to the bowl for extra toppings.
