Spanish Style

This simple dish of yellow rice is topped with vibrant veggies, like roasted red peppers, peas and cherry tomatoes, along with juicy, shredded chicken. It works perfectly as a main dish for one or an easy side dish to complement almost any meal!

This quick dish is inspired by typical Spanish yellow rice. The vegetable combination of roasted red peppers and tomatoes is similar to that commonly used in a sofrito base. This combination of veggies with chicken and rice creates a tender, sweet and savory bite, as well as an eye-catching color combination. Save the best for last by topping it with a hint of intense Manchego cheese and enjoy a recipe you’ll want to bookmark and make again and again!

Manchego Cheese

Manchego cheese is a well-known cheese from Spain, produced and handcrafted in the region of La Mancha. Unlike Mexican-style Manchego, which is a soft cheese made with cow’s milk, Spanish Manchego is a firm, sheep’s milk cheese that can be aged for a couple of years. Known around the world, Manchego is easy to find at most supermarkets. For this recipe, look for aged Manchego, which has a nuttier, more intense flavor and drier texture. It’s perfect for adding an elegant touch to a meal you put together in just 5 minutes!
