  • 1/2 cup shredded, cooked chicken
  • 1/3 cup halved cherry tomatoes
  • 1/3 cup jarred roasted red peppers, sliced
  • 1/3 cup frozen peas
  • 1/4 cup shredded Manchego cheese, divided

    Step 1

  • Heat rice according to package directions.

  • Meanwhile, toss chicken, cherry tomatoes, red peppers and peas together in a medium, microwave-safe bowl. Microwave on HIGH for 60 to 90 seconds, or until heated through.
