Lemon Feta Chicken

Ingredients

  • 1 tbsp olive oil
  • 8 oz chicken breast, boneless and skinless, cut into 1-inch pieces
  • 1/4 cup onion, small diced
  • 2 tbsp lemon juice
  • 1 tsp Greek seasoning
  • 1 cup Minute® Instant Basmati Rice
  • 3/4 cup chicken stock, low sodium
  • 1/4 tsp kosher salt
  • 2 tbsp feta cheese, crumbled
  • 1 large basil leaves, rough chopped

Instructions

  • The combination of Basmati rice and fresh chicken with fresh herbs and spices is a must have!

    Step 1

  • Heat the olive oil in a pan over medium heat.

    Step 2

  • Brown the chicken in the pan for 2 minutes. Remove chicken to a bowl.

    Step 3

  • Add the diced onion to the pan and cook, stirring until onions have softened, about 1 minute.

    Step 4

  • Add the lemon juice and Greek seasoning to the pan and stir in the basmati rice.

    Step 5

  • Pour in the chicken broth, salt, pepper and browned chicken along with any accumulated juices. Stir to combine.

    Step 6

  • Bring to a boil, then immediately remove pan from the heat and cover for 7 minutes or until liquid is absorbed.

    Step 7

  • To serve, spoon onto plates, sprinkle with feta cheese and fresh basil.
