This Mediterranean dish made with fresh herbs and a splash of lemon, goes perfectly with Minute® Basmati Rice.
The combination of Basmati rice and fresh chicken with fresh herbs and spices is a must have!
Heat the olive oil in a pan over medium heat.
Brown the chicken in the pan for 2 minutes. Remove chicken to a bowl.
Add the diced onion to the pan and cook, stirring until onions have softened, about 1 minute.
Add the lemon juice and Greek seasoning to the pan and stir in the basmati rice.
Pour in the chicken broth, salt, pepper and browned chicken along with any accumulated juices. Stir to combine.
Bring to a boil, then immediately remove pan from the heat and cover for 7 minutes or until liquid is absorbed.
To serve, spoon onto plates, sprinkle with feta cheese and fresh basil.
