Ingredients

  • 1lb lean ground beef
  • 1/2 cup Minute® Basmati Rice Cups
  • 1 can (8 oz.) crushed pineapple in juice, drained
  • 1/4 cup carrot, finely grated
  • 1/4 cup onion, chopped
  • 1 egg, lightly beaten
  • 1 tsp ground ginger
  • 1/2 tbsp salt
  • 1 bottle (8 oz.) prepared French dressing
  • 2 tbsp soy sauce

Instructions

  • Whether you’re planning to have friends over, looking to rustle up something delicious for the kids, or just hankering for a savory snack, these Festive Meatballs are a winner!

    Step 1

  • Heat rice according to package. Preheat oven to 400° F. 

    Step 2

  • Mix beef, rice, pineapple, carrots, onions, egg and ginger in medium bowl. Shape into 1-inch meatballs. Place on greased baking sheets. Bake 15 minutes or until browned. 

    Step 3

  • Mix together French dressing and soy sauce. Serve meatballs with dressing mixture.

How to Use Meatballs

  • Meatballs can be placed on a bed of your favorite flavor of Minute® Rice, then garnish with grated Parmesan cheese.
  • Sandwich them between toasted bread to make sliders. 
  • With toothpicks, serve them as an appetizer or finger food. 
  • Make a handmade mozzarella sandwich.

Freezing Meatballs

Additionally, these meatballs can be prepared ahead of time and frozen for later use. Simply double the meatball ingredients and form them into as many as you’d like if you’re interested in having more available for future use.

Place them in a single layer on a baking sheet. Freeze the meatballs until solid. Place them in a freezer bag or a container that is well sealed. Before cooking, thaw in the refrigerator, or bake straight from frozen. 

After cooking, properly cool your meatballs before freezing. Prepare your meatballs according to the directions. Then split whatever you like, either into separate meals or all at once. Freeze after placing in freezer bags or airtight containers.
