  • 1 cup Minute® Ready to Serve White Rice
  • 4 frozen prepared turkey meatballs
  • 1/2 cup red enchilada sauce
  • 1/2 cup frozen corn
  • 1/2 cup canned white beans, drained and rinsed
  • 1/4 cup guacamole


  • In just 10 minutes you can enjoy a warm and delicious dish using Minute® Ready to Serve White Rice and a few tasty pantry ingredients!

    Step 1

  • Microwave rice according to package directions.

    Step 2

  • Microwave meatballs in a microwave-safe dish on HIGH for 1 to 2 minutes or until thawed.

    Step 3

  • Stir in enchilada sauce, corn and beans. Microwave on HIGH, stirring halfway through cooking time, for 2 to 3 minutes or until meatballs are heated through and sauce is simmering.

    Step 4

  • Serve chili over rice. Top with a dollop of guacamole.

    Substitute pinto, kidney or black beans for white beans. Substitute whatever veggies you have on hand or in the freezer for the corn.
