  • 1 cup Minute® Ready to Serve White Rice
  • 4 frozen prepared turkey meatballs
  • 1/2 cup frozen corn
  • 1/2 cup red enchilada sauce
  • 1/2 cup canned white beans, drained and rinsed
  • 1/4 cup prepared guacamole


  • In just minutes you can enjoy a warm and delicious dish using Minute® Ready to Serve White Rice and a few tasty pantry ingredients!

    Step 1

  • Heat rice according to package directions.

    Step 2

  • In a medium, microwave-safe bowl, microwave meatballs on HIGH for 1-2 minutes, or until thawed.

    Step 3

  • Stir in corn, enchilada sauce and beans. Microwave on HIGH, stirring halfway through cooking time, for 2-3 minutes, or until meatballs are heated through and sauce is simmering.

    Step 4

  • Serve chili over rice. Top with a dollop of guacamole.

    Recipe Tips

    Feel free to substitute pinto, kidney or black beans for the white beans called for in the recipe. You can also substitute the corn with whatever veggies you have on hand or in the freezer.

    If you don’t have meatballs in the freezer, use sliced turkey or roast chicken instead.
