Ingredients

  • 1 cup Minute® Ready to Serve White Rice
  • 1 tomato, diced
  • 1/2 avocado, diced
  • 1 green onion, thinly sliced
  • 1 tbsp chopped fresh cilantro
  • 1 tsp lime juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

    Step 1

  • Heat rice according to package directions.

    Step 2

  • In a small bowl, combine tomato, avocado, onion, and cilantro.

    Step 3

  • Add lime juice, salt and pepper.

  • Mix thoroughly and serve.

Tomato and Avocado

Juicy tomatoes and creamy avocados are an irresistible combo! When you have these two items on hand, you’ll have plenty of possibilities for delicious meals. With a few storage tips, you won’t have to worry about any waste: 

Tomatoes

It’s best to store tomatoes at room temperature. Not only do they last twice as long — up to 10 days — but they retain their flavor. When stored in the fridge, tomatoes have a shelf life of about 5 days. Just remember to take them out of the fridge about 30 minutes before serving so you get more flavor.  

Avocados

Remember to buy avocados several days before you plan to use them. To get hard avocados to ripen more quickly, place them and a banana or apple in a brown paper bag for a couple of days. If the stem of the avocado is difficult to remove, it’s not ripe. Once ripe, store them in the fridge for 2 to 3 days.
