  • 2 tbsp butter
  • 1 lb boneless, skinless chicken breast, cut into strips
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp cornstarch
  • 1 can (14.5 oz) chicken broth
  • 1 carrot, sliced diagonally
  • 2 tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1 1/2 cups Minute® White Rice
  • 1 cup snow peas
  • 3 tbsp chopped parsley

    Step 1

  • Melt butter in a large skillet over medium-high heat. Sauté chicken, onion and garlic until chicken is lightly browned, about 5-7 minutes. Stir in cornstarch and cook for 1 minute.

  • Add broth, carrot, lemon juice and salt. Bring to a full boil.

    Step 3

  • Stir in rice, snow peas and parsley. Cover and remove from heat. Let stand for 5 minutes. Fluff with a fork.

    Recipe tips

    For a quicker cook time, cut the chicken into smaller strips.

    Snow peas can be swapped out for roasted asparagus, broccoli or any other green vegetable of choice.

Start by sautéing your chicken strips (marinated or not) in butter with chopped onion and garlic until browned and cooked through. Then, add a bit of cornstarch to thicken all of the delicious flavors in the pan into a delicious sauce. When those ingredients have cooked up, add the broth, carrots, lemon juice and salt. Adding the citrusy lemon juice will work to release the flavors of the other ingredients so they all blend well together. Once that mix is boiling, toss in the pea pods, parsley and rice. It’s smooth sailing after that, while you let the rice absorb all of those unbelievable flavors!

Plan for Success

Marinate your chicken in the morning and you’ll infuse even more delicious flavor into your final dish! Simply whisk together lemon juice, lemon zest, thyme, rosemary, salt and pepper in a large bowl. Add the chicken strips and place the bowl in the fridge before you leave the house in the morning.
