Ingredients

  • 2 tbsp butter
  • 1 lb boneless, skinless chicken breast, cut into strips
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp cornstarch
  • 1 can (14.5 oz) chicken broth
  • 1 carrot, sliced diagonally
  • 2 tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1 1/2 cups Minute® White Rice
  • 1 cup snow peas
  • 3 tbsp chopped parsley

    Step 1

  • Melt butter in a large skillet over medium-high heat. Sauté chicken, onion and garlic until chicken is lightly browned, about 5-7 minutes. Stir in cornstarch and cook for 1 minute.

    Step 2

  • Add broth, carrot, lemon juice and salt. Bring to a full boil.

    Step 3

  • Stir in rice, snow peas and parsley. Cover and remove from heat. Let stand for 5 minutes. Fluff with a fork.

    Recipe tips

    For a quicker cook time, cut the chicken into smaller strips or use cooked chicken.

    Snow peas can be swapped out for roasted asparagus, broccoli or any other green vegetable of choice.
