Melt butter in a large skillet over medium-high heat. Sauté chicken, onion and garlic until chicken is lightly browned, about 5-7 minutes. Stir in cornstarch and cook for 1 minute.
Add broth, carrot, lemon juice and salt. Bring to a full boil.
Stir in rice, snow peas and parsley. Cover and remove from heat. Let stand for 5 minutes. Fluff with a fork.
For a quicker cook time, cut the chicken into smaller strips.
