  • 1 cup Minute® White Rice
  • 2 tbsp canola oil
  • 3/4 cup cubed cooked ham
  • 3/4 cup sliced fresh mushrooms
  • 1/2 cup frozen peas
  • 1/4 cup sliced green onions
  • 1/2 lb raw medium shrimp, peeled and deveined
  • 2 tbsp soy sauce
  • 1 egg, lightly beaten

  • Prepare rice according to package directions. Set aside and allow to cool.

  • Meanwhile, heat oil in a large, nonstick skillet on medium-high heat. Add ham, mushrooms, peas and green onions and cook for 2 minutes, stirring frequently.

  • Add shrimp to the pan and cook, stirring occasionally, for 4 minutes, or until shrimp turn pink.

  • Stir in rice, soy sauce and egg. Cook until egg is set, stirring occasionally.
