Ingredients

  • 2 cups Minute® Jasmine Rice
  • 1/4 cup fresh cilantro leaves
  • 4 green onions (green part only)
  • 1 red chili pepper, seeds removed
  • 1 can (20 oz) pineapple tidbits, drained (reserve 1/4 cup juice)
  • 1 tbsp olive oil
  • 1 tsp garlic, minced
  • 1 1/2 tbsp soy sauce
  • 1 lb frozen, cooked shrimp, thawed and rinsed

Instructions

  • Have a Thai feast at home tonight! This simple Pineapple Thai Rice, made with jasmine rice, is your solution to making a delicious and filling meal with all your favorite takeout flavors.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, place cilantro, green onions and chili pepper in a food processor and process until finely chopped.

    Step 3

  • Transfer cilantro mixture to a medium bowl. Mix in pineapple tidbits and reserved 1/4 cup juice.

    Step 4

  • Heat oil in a large skillet over medium heat and add garlic. Sauté for 30 seconds, until fragrant.

    Step 5

  • Add pineapple mixture and soy sauce to skillet. Bring to a boil.

    Step 6

  • Remove from heat and add shrimp to skillet. Stir to heat shrimp.

    Step 7

  • Fold in hot cooked rice.
