Ingredients

  • 1 tbsp canola oil
  • 1 lb large, uncooked frozen shrimp, thawed, peeled and deveined
  • 2 cups low sodium chicken broth
  • 1 pkg (4 oz) cream cheese, softened
  • 1 1/2 cups Minute® Premium Rice
  • 2 cups frozen broccoli florets, thawed

Instructions

  • Try something new for dinner tonight with this simple and delicious Cheesy Shrimp and Rice dish!

    Step 1

  • Heat oil in a large skillet over medium-high heat. Add shrimp and cook for 2 minutes per side, or until shrimp turn pink. Remove shrimp to a plate. Cover to keep warm.

    Step 2

  • Add broth and cream cheese to skillet; Stir until blended.

    Step 3

  • Add rice and mix well. Cover and reduce heat to low. Cook for 5 minutes.

    Step 4

  • Stir in broccoli and return shrimp to skillet. Cook for an additional 3-5 minutes, or until liquid is absorbed and broccoli and shrimp are heated through.

    Recipe Tip

    For more flavor, stir in 3 slices of cooked and crumbled bacon just before serving.
