Ingredients

  • 1 cup Minute® Instant Basmati Rice
  • 1 tbsp olive oil
  • 1 tbsp shallot, diced
  • 1/4 cup dried cranberries
  • 1/4 cup shelled pistachios, chopped
  • 1/4 tsp salt
  • 1 tsp fresh dill, chopped
  • 1/2 medium lemon
  • 2 tbsp goat cheese crumbles

Instructions

  • Bright citrus flavors combined with tart dried cranberries, crunchy pistachios, and creamy goat cheese, perfectly accented with fresh dill – a stand-alone dish, also fabulous paired with grilled chicken 

     Step 1

  • Heat rice according to package directions. 

     Step 2

  • Meanwhile, heat olive oil in pan on medium heat, add shallots and sauté for 1 minute, add cranberries and heat for an additional minute. 

     Step 3

  • Add pistachios, rice, salt and fresh dill. Mix well until heated through. 

     Step 4

  • Squeeze fresh lemon over rice and serve garnished with goat cheese, lemon slices, and dill on top.
