Ingredients

  • 1 cup Minute® Ready to Serve White Rice
  • 1 cup frozen, diced butternut squash
  • 1/2 cup shredded, cooked chicken
  • 3 tbsp balsamic vinaigrette
  • 2 tbsp chopped pecans

Instructions

  • You’ll love this simple chicken and rice dish made with Minute® Ready to Serve White Rice and butternut squash. Drizzled with a balsamic vinaigrette, it’s full of flavor and makes a great on-the-go meal!

    Step 1

  • Combine rice, butternut squash and chicken in a small, microwave-safe dish. Microwave on HIGH heat for 2 to 3 minutes, stirring occasionally, until the ingredients are heated through.

    Step 2

  • Drizzle with balsamic dressing and garnish with chopped pecans.

    As an alternative to the balsamic vinaigrette, stir together 1 tablespoon of maple syrup or honey with 1 tablespoon of Sriracha hot sauce or Dijon mustard.
