Our Coconut Pineapple Clusters feature a sweet, tropical mixture of coconut, pineapple, creamy rice and delectable chocolate chips. It’s a combo the whole family is sure to love.
Preheat oven to 350°F.
Prepare rice according to package directions. Allow to cool.
Combine rice with coconut, condensed milk, crushed pineapple, chocolate chips, flour, lemon juice, lemon zest, vanilla extract, baking powder and salt in a large bowl. Stir together to mix well.
Line a baking sheet with parchment paper, then coat with nonstick cooking spray. Drop mixture by heaping tablespoonfuls onto baking sheet. Bake for 18 to 20 minutes, or until golden brown.
Cool cookies on baking sheet for 5 minutes. Then, remove to wire racks and allow to cool completely.
