  • 1 1/2 cups Minute® White Rice
  • 1 pkg (14 oz) flaked sweetened coconut
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (8 oz) crushed pineapple, drained
  • 1/2 cup semi-sweet chocolate chips
  • 1/3 cup all-purpose flour
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • nonstick cooking spray

    Step 1

  • Preheat oven to 350°F.

    Step 2

  • Prepare rice according to package directions. Allow to cool.

    Step 3

  • Combine rice with coconut, condensed milk, crushed pineapple, chocolate chips, flour, lemon juice, lemon zest, vanilla extract, baking powder and salt in a large bowl. Stir together to mix well.

    Step 4

  • Drop by heaping tablespoonfuls onto a baking sheet lined with parchment paper sprayed with nonstick cooking spray. Bake for 18 to 20 minutes, or until golden brown.

    Step 5

  • Cool on a baking sheet for 5 minutes. Then, remove cookies to wire racks and allow to cool completely.
