Ingredients

  • 1 cup Minute® Ready to Serve White Rice
  • 1 tbsp olive oil
  • 1 tsp minced garlic
  • 1/2 cup sliced zucchini
  • 1/2 cup sliced yellow squash
  • 1 sliced medium tomato
  • salt
  • black pepper

Instructions

  • This take on the French classic is faster and easier than you think – simply top fluffy White Rice with fresh vegetables and get all the flavors that Ratatouille has to offer!

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Heat oil in a medium skillet over medium heat. Add garlic and sauté 1 minute.

    Step 3

  • Add zucchini and squash. Season with salt and pepper. Cook for 2 minutes.

    Step 4

  • Add tomato and cook 1 minute.

    Step 5

  • Serve over rice.

Choose firm, deep green zucchini. This squash has a mild flavor by nature so for optimal flavor, the smaller the better; in fact, bigger zucchini tends to have a bitter taste. As for summer squash, you’ll also want to feel for firmness – stay away from anything rubbery, wrinkly or nicked.
