Ratatouille Rice

Ingredients

  • 1 cup Minute® Ready to Serve White Rice
  • 1 tbsp olive oil
  • 1 tsp minced garlic
  • 1/2 cup sliced yellow squash
  • 1/2 cup sliced zucchini
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 medium tomato, sliced

Instructions

  • This take on the French classic is faster and easier to make than you think. Simply top fluffy white rice with fresh vegetables and enjoy all the delicious flavors that ratatouille has to offer!

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Heat oil in a medium skillet over medium heat. Add garlic and sauté for 1 minute.

    Step 3

  • Add squash and zucchini. Season with salt and pepper. Cook for 2 minutes.

    Step 4

  • Add tomato and cook 1 minute.

    Step 5

  • Arrange alternating slices of vegetables in a circular pattern on plate. Spoon rice into center of circle, and serve.

Choose firm, deep green zucchini. This squash has a mild flavor by nature so for optimal flavor, the smaller the better. In fact, bigger zucchini tends to have a bitter taste. As for summer squash, you’ll also want to feel for firmness – stay away from anything rubbery, wrinkly or nicked.

There are plenty of recipes that call for both of these vegetables and, since you can refrigerate them in a plastic bag for up to 5 days, you might as well grab extra!
