  • 1 cup Minute® Ready to Serve Jasmine Rice
  • 1 tbsp vegetable oil
  • 1 cup medium cooked shrimp, peeled and deveined
  • 1/2 cup grated carrot
  • 1/4 cup thinly sliced red onion
  • 2 tbsp Pad Thai sauce
  • 1 lime wedge

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Heat oil in a skillet over medium-high heat. Add shrimp and sauté for 1 minute.

    Step 3

  • Add carrot and onion, and continue to cook for an additional 2 minutes.

    Step 4

  • Add rice and sauce. Stir until heated through. Serve with lime.

    Recipe Tip

    For a more authentic version of Pad Thai, add a scrambled egg near the end of cooking. Top with bean sprouts, and crushed peanuts.
