Ingredients

  • 2 cups Minute® White Rice
  • 3 cups oat milk
  • 2/3 cup sugar
  • 1/8 tsp kosher salt
  • 1 tsp vanilla extract
  • 3 tbsp instant coffee powder

Instructions

  • Rich, creamy and vegan, this dessert is sure to please every person at your table.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Combine rice, oat milk, sugar and salt in a medium saucepan. Bring to a boil, lower heat and simmer, stirring occasionally, until most of the oat milk is absorbed and the pudding is creamy, about 20 minutes. Stir in vanilla extract.

    Step 3

  • Divide pudding in half and transfer to two medium-sized bowls. Stir instant coffee powder into one of the puddings.

    Step 4

  • Layer vanilla and coffee rice puddings into glass bowls. Serve warm or chilled.

What is Kosher Salt?
