Ingredients

  • 1 cup Minute® Instant Jasmine Rice
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 2 cloves garlic, minced
  • 4 cups packed kale leaves, chopped
  • 2 tsp lemon juice

Instructions

  • Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, heat oil and butter in medium saucepan set over medium heat; cook garlic for 1 min. Add kale; cook for 2 to 3 mins or until wilted.

    Step 3

  • Add rice to kale mixture; stir in lemon juice.

    Garnish with chopped pecans, and season with salt and pepper if desired.
