  • Preheat the oven to 425°F. Prepare rice according to package directions.

  • Meanwhile, toss Brussels sprouts with olive oil, salt and pepper. Arrange on parchment paper-lined baking sheet. Bake for 15 to 20 minutes or until lightly charred and tender. Toss pecans and vanilla until well coated. Arrange on small parchment paper-lined baking sheet. Bake for 3 to 5 minutes or until golden, fragrant and toasted.

  • Toss together rice, roasted Brussels sprouts, Pomegranate seeds, honey, orange zest, orange juice and pecans. Serve hot or room temperature.


Recipe Tips

Garnish with cooked and crumbled bacon or finely chopped fresh chives if desired.
