Roasted Brussels Sprouts and Rice

This flavorful side dish combines oven-roasted Brussels sprouts with jasmine rice, vanilla pecans, pomegranate seeds and a citrus vinaigrette.

Ingredients

  • 1 cup Minute® Jasmine Rice
  • 1/2 lb Brussels sprouts, halved
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 1/3 cups pecan halves
  • 1 tsp vanilla extract
  • 1/3 cup pomegranate seeds
  • 2 tbsp honey
  • 2 tbsp orange juice
  • 1 tsp orange zest

Instructions

  • This appetizing side dish, made with oven-roasted Brussels sprouts and Minute® Instant Jasmine Rice accented with orange and honey, is so flavorful it just might steal the show from the main dish.

    Step 1

  • Preheat the oven to 425°F. Prepare rice according to package directions.

    Step 2

  • Meanwhile, toss Brussels sprouts with olive oil, salt and pepper. Arrange on a parchment paper-lined baking sheet. Bake for 15 to 20 minutes, or until lightly charred and tender.

    Step 3

  • While sprouts are roasting, stir together pecan halves and vanilla. Arrange on small parchment paper-lined baking sheet. Bake for 3 to 5 minutes, or until golden, fragrant and toasted.

    Step 4

  • Toss together rice, roasted Brussels sprouts, pomegranate seeds, honey, orange juice, orange zest and pecans. Serve hot or at room temperature.

    Recipe Tips

  • Garnish with cooked and crumbled bacon or finely chopped fresh chives, if desired.

Gather your ingredients before you start cooking so you’ll be set up for success.

Once you have your ingredients together, toss your Brussels sprouts on a baking sheet with oil, salt and pepper.  While they are roasting, combine your other ingredients and make the dressing. When your Brussels sprouts are finished, all you need to do is combine and voilá!

If you don’t have any vanilla pecans ready before starting, simply use regular, unflavored nuts.
