Ingredients

  • 1 cup Minute® Ready to Serve Cilantro & Lime Jasmine Rice
  • 1/2 cup shelled edamame
  • 2 tbsp soy sauce
  • 1 tbsp teriyaki sauce
  • 1 tsp sesame oil, divided
  • 1 tsp rice wine vinegar
  • 1/2 tsp grated fresh ginger
  • 1/2 cup (3 oz) sliced smoked salmon
  • furikake, to taste
  • 1 green onion, thinly sliced

Instructions

  • Our Smoked Salmon Poke Bowl combines a light, Asian-style dressing, edamame and smoked salmon with Minute® Ready to Serve Cilantro & Lime Jasmine Rice. You’ll quickly see why this fun dish makes a great weekday dinner!

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Combine rice, edamame, soy sauce, teriyaki sauce, 1/2 teaspoon sesame oil, vinegar and ginger in a small bowl. Stir to mix well.

    Step 3

  • Combine remaining sesame oil, salmon, furikake and green onion in another small bowl.

    Step 4

  • Serve seasoned fish on top of rice mixture.

    If you’re not a fan of smoked salmon, substitute it with tuna or tofu in this recipe.
