Instructions

    Heat oil in a large, deep skillet on medium heat. Add chicken; cook for 8-10 minutes, or until chicken is cooked through, stirring frequently.

    Add rice, tomatoes and broth; mix well. Bring to a boil.

    Reduce heat to low and add the spinach. Cover and simmer for 10 minutes.
