Ingredients

  • 1 tbsp olive oil
  • 1 lb. boneless, skinless chicken breast, cut into bite-size pieces
  • 2 cups Minute® Brown Rice
  • 1 1/2 cups halved cherry tomatoes
  • 1 can (14.5 oz) chicken broth
  • 6 cups fresh baby spinach leaves
  • 1/4 cup grated Parmesan cheese

Instructions

  • This one-skillet Chicken and Spinach Rice Florentine dish with Minute® Instant Brown Rice combines baby spinach, cherry tomatoes and Parmesan cheese for a savory dinner in just 30 minutes!

  • Step 1

  • Heat oil in a large, deep skillet on medium heat. Add chicken; cook for 8-10 minutes, or until chicken is cooked through, stirring frequently.

    Step 2

  • Add rice, tomatoes and broth; mix well. Bring to a boil.

    Step 3

  • Reduce heat to low. Cover and simmer for 10 minutes.

    Step 4

  • Stir in spinach until wilted.  Stir in the cheese. Let stand for 5 minutes.

Chicken Perfection

To give your chicken an extra touch of Italian flavor before cooking, coat it in a bit of ground rosemary, salt and pepper before tossing it into the pan. To cut down on the cook time, cut your chicken into small pieces so the heat will take less time to distribute evenly through each slice. Leave the chicken in the skillet when you add the rest of the ingredients to make for less clean up. Also, be sure to add the broth to the pan along with the chicken to infuse the rice with lots of added flavor.

Though it looks like this recipe calls for a lot of spinach, it will cook down fairly quickly. While your Chicken and Spinach Rice Florentine is simmering, throw together a quick Caprese Rice Salad with some lettuce, tomatoes, mozzarella and basil, to serve alongside.
