Ingredients

  • 1 cup Minute® Ready to Serve Basmati Rice
  • 1/2 cup canned crab, drained
  • 2 tbsp chopped celery
  • 2 tbsp diced red onion
  • 2 tbsp ranch dressing
  • 2 tsp freshly squeezed lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup sliced cucumber

Instructions

  • On a hot summer day, nothing beats a Summer Crab Roll Rice Bowl. It’s packed with refreshing veggies, creamy ranch, and fragrant Basmati Rice.

    Step 1

  • Heat rice according to package directions.

    Step 2

  • In a small bowl, toss together crab, celery, red onion, ranch dressing and lemon juice. Season with salt and pepper.

    Step 3

  • Transfer rice to shallow bowl. Serve with crab mixture, tomatoes and cucumber

    Recipe Tips

    Substitute canned crab with cooked shrimp or imitation crab.

    Season crab mixture with 1/4 teaspoon of Old Bay seasoning or Cajun seasoning, if desired.

    Garnish with scallions, if desired.
