Step 1
Heat rice according to package directions.
Step 2
In a small pot, add all the vegetables to boiling water for 30 seconds. Remove vegetables and place in a small bowl full of ice and water for 30 seconds, and then drain.
Step 3
In the same bowl, add vegetables back in, as well as rice wine vinegar and cilantro.
Step 4
Mix all ingredients with rice and serve.
Add your favorite protein for a non-vegetarian option.
You can replace the purple cauliflower with white (or any color) cauliflower.
