Ingredients

  • 1 cup Minute® Ready to Serve Butter & Sea Salt Rice
  • 1/4 cup yellow squash, diced
  • 1/4 cup carrot, diced
  • 1/4 cup purple cauliflower, chopped
  • 1/4 tbsp cilantro, chopped
  • 1 tbsp rice wine vinegar

Instructions

  • A modern spin on a Spanish favorite, this delicious dish is a perfect start to trying new recipes.  

    Step 1

  • Heat rice according to package directions. 

    Step 2

  • In a small pot, add all the vegetables to boiling water for 30 seconds. Remove vegetables and place in a small bowl full of ice and water for 30 seconds, and then drain. 

    Step 3

  • In the same bowl, add vegetables back in, as well as rice wine vinegar and cilantro. 

    Step 4

  • Mix all ingredients with rice and serve. 

    Recipe Tips

    Add your favorite protein for a non-vegetarian option.

    You can replace the purple cauliflower with white (or any color) cauliflower.
