This Thai-inspired rice bowl has delicious flavors in every bite thanks to a tasty combination of ground pork, cucumbers and brown rice.
Try a new stir-fry tonight! Made with seasoned ground pork topped with a simple pickled cucumber salad and served over a bed of whole grain Minute® Instant Brown Rice, this dish is satisfying, loaded with flavor and guaranteed to please.
Prepare rice according to package directions. Toss cucumber with 1/4 cup rice wine vinegar; let stand for 5-10 minutes or until lightly pickled.
Meanwhile, heat oil in a large skillet over high heat. Add pork, garlic and shallots and cook, stirring, for 5-8 minutes or until pork starts to brown.
Stir in soy sauce, water, brown sugar, fish sauce and remaining rice wine vinegar. Cook for 5-8 minutes or until pork is crispy and cooked through, and sauce is thickened and sticky.
Serve pork over rice, topped with pickled cucumbers; garnish with fresh herbs.
Substitute ground turkey, chicken, or beef for pork, if desired.
