Crispy Ground Pork and Rice

Ingredients

  • 1 1/2 cups Minute® Instant Brown Rice
  • 2 cups cucumbers, thinly sliced
  • 1/3 cup rice wine vinegar, divided
  • 2 tbsp canola oil
  • 1 lb lean ground pork
  • 2 shallots, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup water
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp fish sauce
  • 1/2 cup fresh herbs, torn (such as Thai basil, cilantro and/or mint)

Instructions

  • Try a new stir-fry tonight! Made with seasoned ground pork, topped with a simple pickled cucumber salad and served over a bed of whole grain Minute® Instant Brown Rice, this dish is satisfying, loaded with flavor and guaranteed to please.

    Step 1

  • Prepare rice according to package directions. Toss cucumbers with 1/4 cup rice wine vinegar; let stand for 5 to 10 minutes or until lightly pickled.

    Step 2

  • Meanwhile, heat oil in large skillet set over high heat; cook ground pork, shallots and garlic for 5 to 8 minutes or until pork is starting to brown.

    Step 3

  • Stir in 1/4 cup water, soy sauce, brown sugar, fish sauce and remaining rice wine vinegar. Cook for 5 to 8 minutes or until pork is crispy and cooked through, and sauce is thickened and sticky.

    Step 4

  • Serve pork over rice and pickled cucumbers; garnish with fresh herbs.

    Substitute ground turkey, chicken, or beef for pork, if desired.
