  • 1 tbsp canola oil
  • 1 lb boneless, skinless chicken breast, cut into thin strips
  • 1 tsp minced garlic
  • 1 pkg (16 oz) frozen stir-fry vegetables
  • 1 1/4 cups water
  • 1/4 cup light soy sauce
  • 1 tbsp sugar
  • 2 cups Minute® White Rice

    Step 1

  • Heat oil in a large skillet set over medium-high heat. Add chicken and garlic and sauté for 6-7 minutes, until chicken is evenly browned and cooked through.

    Step 2

  • Add vegetables, water, soy sauce and sugar to skillet. Bring to a boil.

    Step 3

  • Stir in rice; cover. Remove from heat and let stand for 5 minutes. Fluff rice with a fork before serving.

    Recipe Tips

To add more whole grains to this meal, feel free to use Minute® Brown Rice in place of the white rice called for in the recipe.

To infuse more flavor into the rice, try cooking it in chicken or vegetable broth instead of water.

On days when you don’t even have time to wait for your frozen goods to thaw, simply use this opportunity to use up any leftovers in the fridge. Use a mix of fresh vegetables or make a pit stop at the local grocery store salad bar and pick up some precooked shredded chicken and vegetables. If you use precooked chicken, make sure to sauté the garlic alone and add in the chicken with the vegetables and sauce.
