Heat rice according to package directions.

Heat oil in a medium skillet over medium heat. Add chicken, onion, jalapeño and garlic. Cook for 2 minutes, stirring frequently.

Serve chicken mixture over rice. Garnish with mango and lime juice. Season with salt and pepper, if using.
For a speedier version of this recipe, combine the chicken, garlic, onion and jalapeño in a small, microwave-safe dish. Microwave on HIGH for 1-2 minutes, until heated through. Then continue with Step 3 of the recipe.
