Ingredients

  • 1 cup Minute® Ready to Serve Basmati Rice
  • 1 tbsp vegetable oil
  • 1/2 cup shredded, cooked chicken
  • 1 clove garlic, minced
  • 1/4 cup sliced onion
  • 1/2 jalapeño, sliced
  • 1/4 cup mango, diced
  • 1/2 tsp lime juice
  • salt and pepper (optional)

Instructions

    Step 1

    Heat rice according to package directions.

    Step 2

    Heat oil in a medium skillet over medium heat. Add chicken, garlic, onion and jalapeño. Cook for 2 minutes.

    Step 3

    Serve over rice. Add mango and lime juice.

    Step 4

    Season with salt and pepper, if using.
