Ingredients

  • 1 cup Minute® Basmati Rice Cups
  • 1 tbsp vegetable oil
  • 1/2 cup shredded, cooked chicken
  • 1/4 cup sliced onion
  • 1/2 jalapeño, sliced
  • 1 clove garlic, minced
  • 1/4 cup diced mango
  • 1/2 tsp lime juice
  • salt and pepper (optional)

Instructions

  • Packed with juicy mango and spicy jalapeños, this Spicy Mango Chicken is sweet, with just the right amount of heat! The best part? The fluffy and fragrant Minute® Basmati Rice Cups will soak up every last drop of flavor!

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Heat oil in a medium skillet over medium heat. Add chicken, onion, jalapeño and garlic. Cook for 2 minutes, stirring frequently.

    Step 3

  • Serve chicken mixture over rice. Garnish with mango and lime juice. Season with salt and pepper, if using.

    Recipe Tip

    For a speedier version of this recipe, combine the chicken, garlic, onion and jalapeño in a small, microwave-safe dish. Microwave on HIGH for 1-2 minutes, until heated through. Then continue with Step 3 of the recipe.
