Ingredients

  • 1 cup Minute® Ready to Serve Chicken & Herb Seasoned Rice
  • 1/2 cup shredded, cooked chicken
  • 1/3 cup frozen corn
  • 1/4 cup shredded Mexican cheese blend
  • 2 tbsp cream cheese, cut into cubes
  • 2 tbsp pickled sliced jalapeño peppers

Instructions

  • Enjoy all of your favorite jalapeño popper flavors in a tasty and quick rice bowl that comes together in just 5 minutes!

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Toss together chicken, corn, Mexican cheese blend, cream cheese and jalapeños in a microwave-safe bowl. Microwave on HIGH for 60-90 seconds, or until chicken and corn are heated through.

    Step 3

  • Toss rice with chicken mixture in bowl.

    Recipe Tip

    Sprinkle with crumbled tortilla chips for a crunchy finish.

In this dish, we’ve repurposed your favorite jalapeño popper ingredients into a tasty rice bowl. Instead of using the peppers as a vessel for a rice and cheese mixture, we’ve blended pickled jalapeño peppers in with the other ingredients for more balance. 

For this dish, we start with fluffy chicken-flavored rice that is made with no preservatives or MSG and heats up in just 1 minute. You can also swap in plain white rice or whole grain brown rice, if that’s what you have on hand. If you love sweet summer corn, feel free to use it fresh. Or, use frozen or canned corn if making this dish when corn is out of season.
