Reinvented Poppers

In this dish, we’ve reinvented your favorite jalapeño popper ingredients into a tasty rice bowl. Instead of using the peppers as a vessel for a rice and cheese mixture, we’ve blended pickled jalapeño peppers in with the other ingredients for more balanced flavor.

We’ve used fluffy chicken flavored rice that is made with no preservatives or MSG and heats up in just 1 minute to keep you feeling full longer. You can also swap in plain White Rice or whole grain Brown Rice, if that’s what you have on hand. If you love sweet summer corn, feel free to use it fresh or, if you want to make this bowl all year round, use frozen or canned corn.

Use this recipe to repurpose any leftover chicken you have or use tender rotisserie chicken from the grocery store. The cream cheese here adds tangy flavor and creamy texture. Be sure to also top everything off with Mexican-style shredded cheese, for a true jalapeño popper experience.

For a truly unexpected bite, switch up your filling with something like Microwave Fried Rice or Shrimp Fried Rice with eggAdd a bit of Asian-inspired taste to your peppers! Alternatively, if it’s a Latin American filling you’re craving try this easy Mexican rice recipe instead.
