Ingredients

  • 1 can (20 oz) pineapple chunks, drained, juice reserved
  • 2 cups Minute® Brown Rice
  • 1 lb boneless, skinless chicken breast, cut into 1/2-inch cubes
  • 1/2 tsp salt
  • 2 tbsp all-purpose flour
  • 1 tbsp canola oil
  • 1 cup diced red bell pepper
  • 1 cup sugar snap peas
  • 2/3 cup sweet and sour sauce
  • 1/4 cup reduced sodium soy sauce
  • 1 large orange, zested and juiced
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/4 cup toasted cashew nuts, coarsely chopped
  • 1 green onion, sliced (optional)

    Step 1

  • Measure reserved pineapple juice and add enough water to make 2 cups of liquid. Prepare rice according to package directions, using the pineapple juice and water mixture.

    Step 2

  • Meanwhile, season chicken with salt then coat with flour.

    Step 3

  • Heat oil in a large skillet or wok over medium-high heat. Cook chicken for 5-7 minutes, or until the edges are golden brown.

    Step 4

  • Add pineapple chunks, bell pepper and snap peas. Sauté for 3-5 minutes, until vegetables are slightly softened.

    Step 5

  • Add sweet and sour sauce, soy sauce, orange zest, orange juice and crushed red pepper flakes, if using. Cook, stirring, for 3 minutes, or until the sauce begins to boil.

    Step 6

  • Serve chicken mixture over rice. Top with cashews and green onions, if using.
