Measure reserved pineapple juice and add enough water to make 2 cups of liquid. Prepare rice according to package directions using the pineapple juice and water mixture.
Season the chicken with salt then coat with flour.
Heat oil in a large skillet or wok over medium-high heat and cook chicken for 5 to 7 minutes, or until the edges are golden brown.
Add pineapple chunks, bell pepper and snap peas. Sauté for 3-5 minutes, until vegetables are slightly softened.
Add sweet and sour sauce, soy sauce, orange zest, orange juice and crushed red pepper flakes (if using) to the pan. Stir and cook an additional 3 minutes, or until the sauce begins to boil.
Serve over brown rice topped with cashews and green onions, if using.
