  • Prepare rice according to package directions.

  • Meanwhile, heat oil in large skillet over medium heat; cook shallots and garlic for 2 to 3 minutes or until starting to soften

  • Stir in rice, peas, pesto, salt, pepper and chili flakes; cook for 3 to 5 minutes or until heated through and rice is well coated.

  • Add tomatoes to skillet; cook for 1 to 2 minutes or until softened slightly. Stir in pecorino and basil.


Recipe Tips

Substitute green beans, asparagus or broccoli florets for peas.
