Pea and Sun-Dried Tomato Pesto Rice

Ingredients

  • 2 cups Minute® Jasmine Rice
  • 2 tbsp olive oil
  • 2 shallots, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1/2 cup prepared sun-dried tomato pesto
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Pinch red chili flakes
  • 2 cups halved grape tomatoes
  • 1/3 cup shaved Pecorino cheese
  • 2 tbsp thinly sliced fresh basil

Instructions

  • Liven up your rice with the fresh flavors of sun-dried tomato pesto and shaved Pecorino cheese in this simple, 30-minute dish.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, heat oil in a large skillet over medium heat. Cook shallots and garlic for 2 to 3 minutes, or until starting to soften.

    Step 3

  • Stir in rice, peas, pesto, salt, pepper and chili flakes. Cook for 3 to 5 minutes, or until heated through and rice is well coated.

    Step 4

  • Add tomatoes to skillet. Cook for 1 to 2 minutes, or until softened slightly. Stir in Pecorino and basil.

    Recipe Tips

  • Substitute green beans, asparagus or broccoli florets for the peas, if you prefer.
