Prepare rice according to package directions.
Meanwhile, heat oil in a large skillet over medium heat. Cook shallots and garlic for 2 to 3 minutes, or until starting to soften.
Stir in rice, peas, pesto, salt, pepper and chili flakes. Cook for 3 to 5 minutes, or until heated through and rice is well coated.
Add tomatoes to skillet. Cook for 1 to 2 minutes, or until softened slightly. Stir in Pecorino and basil.
Substitute green beans, asparagus or broccoli florets for the peas, if you prefer.
