Ingredients

  • 1/2 tsp vegetable oil
  • 1/4 cup onion, chopped
  • 4 oz lean ground beef
  • 1/8 tsp kosher salt
  • 1/8 tsp oregano, dried
  • 1 cup Spanish Rice Cups
  • 1/4 cup cheddar cheese, grated
  • tortilla chips (optional)
  • pico de gallo (optional)

Instructions

  • This casserole made with savory Spanish Rice can do double-time as an entrée, and you can double the ingredients for a party dish.

    Step 1

  • Heat the oil in a pan over medium heat. 

    Step 2

  • Add the onions and cook, stirring until they start to soften (about 3 minutes). 

    Step 3

  • Add the beef, oregano and salt and cook, breaking up the meat up into small pieces as it browns. Cook for 5 minutes or until meat is cooked through. 

    Step 4

  • Meanwhile, heat the rice according to package instructions. 

    Step 5

  • Press the rice into the bottom of a baking dish to form the crust. 

    Step 6

  • Spread the cooked hamburger meat on top of the rice. 

    Step 7

  • Sprinkle with cheddar cheese and place under the broiler to melt the cheese. 

    Step 8

  • Serve with tortilla chips and Pico de Gallo.
