Heat rice according to package directions.
Brush bottom of a microwave-safe cup or ramekin with oil, or spray lightly with cooking spray. Crack egg into the cup. Pierce both yolk and white with a fork a few times to help prevent the egg from exploding. Cover cup with plastic wrap, pulling some back to allow venting. Microwave on HIGH for 30 to 45 seconds, or until egg white is set and the yolk is still runny.
Place arugula in a small bowl and top with rice. Top with tomatoes, bacon and cooked egg. Drizzle with dressing.
Substitute Italian dressing with balsamic, ranch or Caesar, if preferred.
