Ingredients

  • 1 cup Minute® Ready to Serve White Rice
  • 1/4 tsp canola oil
  • 1 egg
  • 1 cup arugula
  • 5 grape tomatoes, halved
  • 2 slices ready-cooked bacon, crumbled
  • 2 tbsp Italian dressing

Instructions

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Brush bottom of a microwave-safe cup or ramekin with oil, or spray lightly with cooking spray. Crack egg into cup. Pierce both yolk and white with a fork a few times to help prevent the egg from exploding. Cover cup with plastic wrap, pulling some back to allow venting. Microwave on HIGH for 30-45 seconds, or until egg white is set and the yolk is still runny.

    Step 3

  • Place arugula in a small bowl and top with rice. Top with tomatoes, bacon and cooked egg. Drizzle with dressing.

    Recipe Tip

    Substitute Italian dressing with balsamic, ranch or Caesar, if preferred.
