Ingredients

  • 1 cup Minute® Ready to Serve White Rice
  • 1/4 tsp vegetable oil
  • 1 egg
  • 1 cup arugula
  • 5 grape tomatoes, halved
  • 2 slices ready-cooked bacon, crumbled
  • 2 tbsp Italian dressing

    Step 1

  • Heat white rice according to package directions.

    Step 2

  • Brush bottom of microwave-safe cup or ramekin with oil, or spray lightly with cooking spray. Crack 1 egg into the cup. Pierce both yolk white with a fork a few times (this will help prevent the egg from exploding). Cover cup with plastic wrap, pulling some back to allow venting. Microwave on HIGH for 30 to 45 seconds, or until egg white is set and the yolk is still runny.

    Step 3

  • Serve rice over arugula. Top with grape tomatoes, bacon and cooked egg. Drizzle with dressing.

    Substitute Italian dressing with balsamic, ranch or Caesar if preferred.
