Ingredients

  • 2 cups Minute® Jasmine Rice
  • 2 tbsp canola oil, divided
  • 2 boneless, skinless chicken breast, cut into thin strips
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 pkg (16 oz) broccoli slaw
  • 1/2 cup carrot, cut into matchsticks
  • 3/4 cup apricot preserves
  • 1/2 cup water
  • 2 tbsp light soy sauce
  • 1 tsp cayenne
  • 1 tsp ground ginger
  • 1/2 tsp red pepper flakes (optional)

Instructions

    Step 1
    Prepare rice according to package directions. Set aside.

    Step 2
    Heat 1 tablespoon of oil in a large skillet over medium heat. Lightly season chicken with salt and pepper and add to pan. Sauté chicken until cooked through, about 5-10 minutes. Set aside.

    Step 3
    Turn heat to medium-high and add remaining oil. Add broccoli slaw and carrots to skillet. Sauté until beginning to soften, about 3 minutes.

    Step 4
    Push vegetables aside and add apricot preserves, water, soy sauce, cayenne, ground ginger and red pepper flakes (if using) to skillet. Stir to combine.

    Step 5
    Stir in chicken, bring to a boil and simmer to heat through.

    Step 6
    Serve over hot rice.
