Ingredients

  • 1 cup Minute® Multi-Grain Medley Cups
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup chopped cucumber
  • 1/4 cup Kalamata olives, pitted and halved
  • 2 tbsp crumbled feta cheese
  • 2 tbsp Greek vinaigrette
  • chopped fresh mint leaves (optional)

Instructions

  • This Mediterranean-Style Rice and Quinoa Salad combines tomatoes, cucumber, feta and olives with whole grain brown rice, red quinoa and flax seeds. Mixed with a zesty Greek vinaigrette, this salad packs a medley of Mediterranean flavors into one dish. 

     Step 1

  • Heat medley according to package directions.

    Step 2

  • Combine medley, tomatoes, cucumber, olives, feta cheese and vinaigrette in a medium-sized bowl.

    Step 3

  • Toss to coat all ingredients. Garnish with mint, if using.
