Ingredients

  • 2 cups Minute® Instant White Rice
  • 1 tbsp olive oil
  • 4 boneless, skinless chicken breasts
  • 1 can (14.5 oz) Italian-style diced tomatoes, undrained
  • 1 cup frozen cut green beans
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Treat yourself to a Mediterranean-style dinner of simmered chicken, delicious, crisp green beans and Italian-style tomatoes served over a bed of white rice. This is one perfect weeknight meal, ready in minutes!

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Heat oil in a large skillet set over medium-high heat. Add chicken and cook for 3-4 minutes per side, until evenly browned.

    Step 3

  • Add tomatoes with their liquid and green beans to skillet. Bring to a boil. Cover and reduce heat to medium-low.

    Step 4

  • Simmer for 5 minutes, or until chicken is cooked through (170°F) and beans are crisp-tender. Stir in salt and pepper. Serve over cooked rice.
