Heat rice according to package directions.
In microwave-safe bowl, toss together tomatoes and pulled pork; microwave on High for 60 to 90 seconds or until heated through.
Stir in rice. Sprinkle with Cajun seasoning.
Store leftover drained diced tomato and green chilies in airtight container in refrigerator for 3 to 4 days. Use in soups or cocktails.
