  • 1 cup Minute® Ready to Serve Southwest Pinto Beans and Rice
  • 1/2 cup pre-shredded coleslaw mix
  • 1/2 cup shredded, rotisserie chicken
  • 1/4 cup shredded kale
  • 1/4 cup diced red pepper
  • 2 tbsp coleslaw dressing
  • 2 tsp Sriracha hot sauce


  • Crunchy and delicious, this yummy slaw is spiced with coleslaw dressing and Sriracha and ready in just minutes! Use it as a quick and filling lunch or serve it as a side dish at dinner or your next BBQ.

    Recipe Tips

    If you like things extra spicy, add jalapeño slices for an extra kick!

    Add 1/4 cup of grated Cheddar cheese, if desired.
