Ingredients

  • 1 cup Minute® Ready to Serve Garlic & Olive Oil Jasmine Rice
  • 1/4 cup chicken or vegetable broth
  • 2 tbsp lemon juice
  • 2 tbsp tahini
  • 1/2 tsp ground cumin
  • 1/2 cup chickpeas
  • 1 tsp olive oil
  • pinch of smoked paprika
  • pita chips, pretzels or vegetables (for serving)

Instructions

  • Step 1

  • Heat rice according to package directions.

    Step 2

  • Combine broth, lemon juice, tahini and cumin in a medium-sized bowl.

    Step 3

  • Fold in chickpeas and rice.

    Step 4

  • Drizzle with olive oil and sprinkle with paprika.

  • Serve with pita chips, pretzels or vegetables, if desired.

    Recipe Tips

    To add a crispy texture to the chickpeas, start by toasting them in a pan with olive oil, cumin and salt.

    Find tahini, a condiment made of toasted, ground sesame seeds, in the spice or international food aisle of your grocery store.
