This vegetarian Kale and Kimchi “Fried” Rice comes together in just 3 simple steps and 5 minutes!

Step 1
Heat rice according to package directions.
Step 2
In a medium, microwave-safe bowl, combine kale, kimchi and soy sauce. Cover and microwave on HIGH for 1 minute.
Step 3
Add rice and egg and mix well to combine. Cover and microwave on HIGH for an additional 30 seconds. Stir and serve.
Drizzle with sesame oil, for more flavor.
