Step 1
Prepare rice according to package directions.
Step 2
Meanwhile, place steak strips in a medium bowl. Sprinkle with cornstarch; toss to coat.
Step 3
Add orange juice and ginger to bowl. Stir until well blended.
Step 4
Heat oil in a large, nonstick skillet over medium-high heat. Add steak mixture and stir-fry for 4-5 minutes, or until steak is cooked through. Reduce heat to medium-low.
Step 5
Stir in broccoli, water chestnuts and soy sauce. Cover and simmer for 5 minutes, or until sauce has thickened, stirring frequently.
Step 6
Serve beef and vegetable mixture over rice. Sprinkle with peanuts, if using.
