Ingredients

  • 2 tbsp olive oil
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp finely chopped fresh thyme
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 5 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 can (19 oz) cannellini beans, drained and rinsed
  • 4 cups chopped kale
  • 1 cup Minute® Jasmine Rice
  • 1/3 cup finely grated Parmesan cheese
  • 1/4 cup thinly sliced basil
  • 1/4 tsp red chili flakes

Instructions

  • Prepared in an Instant Pot multi cooker, this rustic Italian soup makes a deliciously satisfying meal for the whole family.

    Step 1

  • Set Instant Pot to Sauté setting over High heat. Heat oil. Add carrot, celery, onion, garlic, thyme, oregano, salt and pepper; cook for 3-5 minutes, or until starting to soften. Stir in broth and tomatoes.

    Step 2

  • Lock the lid in place and move the pressure valve to Sealing. Select Pressure Cook on High for 10 minutes. Once cooking is complete, manually release pressure according to manufacturer’s instructions. Carefully remove lid.

    Step 3

  • Set Instant Pot to Sauté setting over High heat; bring to a boil. Stir in beans and kale; cook for 2 minutes, or until softened.

    Step 4

  • Stir in rice. Set Instant Pot to Warm setting. Cover and let stand for 5 minutes.

    Step 5

  • Stir in Parmesan, basil and red chili flakes.

    Recipe Tips

    Substitute Romano beans for cannellini beans, if desired.

    Make this recipe completely vegetarian by substituting vegetable broth for the chicken broth.
