Ingredients

  • 1 cup Minute® Ready to Serve Cilantro & Lime Jasmine Rice
  • 4 prepared vegetarian or plant-based meatballs
  • 1/3 cup salsa
  • 1/4 avocado, pitted, peeled and sliced
  • 2 tbsp feta cheese, crumbled

Instructions

  • Take meatballs south of the border by adding creamy avocado, zesty Cilantro & Lime Jasmine Rice, and flavorful salsa. With just 5 ingredients and in 6 minutes, you could be enjoying a tangy meatball meal with a kick!

    Step 1

  • Heat rice according to package directions.

    Step 2

  • In a small, microwave-safe bowl, toss together meatballs and salsa. Microwave on HIGH for 60-90 seconds or until heated through.

    Step 3

  • Stir rice into meatball mixture. Top with avocado and feta.
