Ingredients

  • 1 bag Minute® Rice & Quinoa
  • 1 cup vanilla soy milk
  • 1/2 cup chopped dried fruit bits
  • 1 tbsp brown sugar

Instructions

  • Looking for a vegan dish to add to your Sunday brunch? Look no further! This Rice and Quinoa Breakfast Medley from Minute® Rice is simmered to perfection in vanilla soy milk and topped with brown sugar and your choice of dried or fresh fruit.

    Step 1

  • Combine rice and quinoa and soy milk in a small saucepan. Bring to a boil.

    Step 2

  • Reduce heat to low, cover and simmer for 10 minutes, or until all the liquid is absorbed.

    Step 3

  • Stir in the dried fruit and brown sugar. Serve warm.

    Substitute honey or another marmalade or jam of choice for the brown sugar.
