Bright citrus flavors combined with tart dried cranberries, crunchy pistachios, and creamy goat cheese, perfectly accented with fresh dill – a stand-alone dish, also fabulous paired with grilled chicken.
Step 1
Heat rice according to package directions.
Step 2
Meanwhile, heat olive oil in pan on medium heat, add shallots and sauté for 1 minute, add cranberries and heat for an additional minute.
Step 3
Add pistachios, rice, salt and fresh dill. Mix well until heated through.
Step 4
Squeeze fresh lemon over rice and serve garnished with goat cheese, lemon slices, and dill on top.
