Ingredients

  • 2 acorn squash, cut in half, seeded
  • 1 bag Minute® Rice & Quinoa
  • ½ lb Italian sausage links, casings removed, crumbled
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 1 tbsp garlic cloves, minced
  • 1/4 tsp red pepper flakes, crushed
  • 3 cups kale, washed and cut into bite-sized pieces
  • ½ cup dried cherries, chopped
  • ½ tbsp fresh rosemary, chopped
  • ½ tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/3 cup Parmesan cheese, grated

Instructions

  • This colorful and delicious Kale and Sausage Multigrain Stuffed Acorn Squash dish is a family-friendly dinner you’ll be happy to serve any night of the week. You can also make it for your next dinner party and impress your guests!

    Step 1

  • Prepare rice and quinoa according to package directions.

    Step 2

  • Place the acorn squash halves sliced side down in a microwave safe bowl with 2 tbsp of water. Place in a microwave for 10 minutes. 

    Step 3

  • Brown sausage for 5-7 minutes. 

    Step 4

  • Add celery, onion, garlic, and red pepper flakes. Cook for 2-3 minutes, until the onion is translucent. 

    Step 5

  • Add kale and cook for an additional 2-3 minutes, until kale is wilted. 

    Step 6

  • Remove pan from heat and stir in dried cherries, rosemary, thyme, and rice, and quinoa. Season with salt and pepper. 

    Step 7

  • Preheat oven to 400°F. Scoop rice mixture into cooked squash halves. Sprinkle each with Parmesan cheese. 

    Step 8

  • Bake for 10-12 minutes, until the topping begins to brown. Serve with extra filling. 

    Recipe Tip 

    Acorn Squash can also be cooked in the oven for extra flavor. Drizzle each squash half with 1/2 tablespoon oil. Place cut-side-down on a foil-lined baking sheet and roast for 40-45 minutes, or until squash is tender.
