Ingredients

  • 2 tbsp canola oil
  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 carrot, diced
  • 1 onion, diced
  • 1 zucchini, diced
  • 1 cup tandoori sauce
  • 2 tbsp tomato paste
  • 1 1/2 cups chicken broth
  • 2 cups Minute® White Rice
  • 1/2 cup plain Greek yogurt
  • 2 green onions, thinly sliced

Instructions

  • The irresistible flavors of this oven-baked Chicken Tandoori Rice Skillet Casserole will tantalize your taste buds with every bite. Bring restaurant-style cooking to your table, in just 30 minutes!

    Step 1

  • Preheat oven to 375˚F.

    Step 2

  • Heat oil in a medium, ovenproof skillet set over medium-high heat. Season chicken with salt and pepper. Cook for 2-3 minutes, or until chicken starts to brown. Add carrot, onion and zucchini to the pan and sauté for 2-3 minutes, or until the vegetables start to soften.

    Step 3

  • Stir in tandoori sauce and tomato paste. Cook for 1 minute. Stir in broth and bring to a boil. Stir in rice, cover and bring to a mild simmer.

    Step 4

  • Transfer skillet to oven and bake for 10-15 minutes, or until rice absorbs most of the liquid. Let stand for 5 minutes before serving.

    Step 5

  • Serve with a dollop of yogurt and a sprinkle of green onions.
